Biskut Kacang

This is my second Biskut Kacang recipe published in this blog; this one courtesy of Kak Ungku. I like this recipe as it uses cups as the unit of measurement. The following ingredients have been adjusted from the original recipe but still the cookies turned out nice.


Ingredients

1 cup corn oil
1.1/2 cups ground toasted peanuts
1 cup castor sugar
2.1/2 cups flour
1 egg

Mix oil with sugar until dissolved. Beat in the egg. Add peanuts and flour to form dough. Bake at 160F, at about 20 minutes. Will yield about 140 pieces, enough to fill a plastic container as in the picture. Cool cookies on a paper towel as it will absorb the  excess oil.

How long it took me from start to finish using 8x8 tray and a single rack oven? About 2 hours.
